Latin Style Lentils
With Bacon
Ingredients
- 1 Onion (diced)
- 1 Package of Bacon (chopped)
- 4 1/2 Cups of Water
- 1 1/2 Cups Of Lentils
- 1 Can of Diced Tomatoes
- 3 Chicken Bouillon Cubes
- 4 Red Potatoes (diced)
- 2 Carrots (diced)
- 1 Tbs of Chipotle
Steps (Stove Top)
- In a large pot, cook the onion until brown.
- Add Back and slightly.
- Add water, bouillon, tomatoes, and lentils and cook for 40 minutes.
- Add carrots, Potatoes, and chipotle. Cook everything until the potatoes and carrots are tender
Steps (Insta-Pot)
- In the Insta-pot on Sauté Mode, cook the onion until brown.
- Add Bacon and Slightly cook
- Add water, bouillon, tomatoes,carrots, Potatoes, and lentils and pressure-cook on Hi for
40 minutes, then quick release the pressure.
- Stir in chipotle.
